In Hardangerfjord, the luxury restaurant Iris opens on 21 June 2023

The new restaurant Iris is housed in the floating art installation Salmon Eye, which is located in the middle of the Hardangerfjord and is all about sustainable marine life. The restaurant is run by Anika Madsen, a Danish chef. An 18-course menu is served.

The structure has a double-curved ellipsoidal design, with the silver, spherical dome appearing to float amidst the waters of the Hardangerfjord. The fjord itself is surrounded by stunning mountains and glaciers.

The gourmet experience begins on the landward side in Rosendal. Before guests are taken to the Salmon Eye in all-electric boats, they go on a unique expedition to learn about the ingredients of the menu.

Anika Madsen is known for her passion for discovering new, unusual and exciting sea ingredients and her commitment to sustainability. She wants to show her guests that the world needs to rethink how to ensure a sustainable development of the global food system by using only local ingredients. Each dish has a connection to the farmers, fishermen and producers who provide the ingredients for the dishes. 

The Iris restaurant has only 24 seats per evening. It is open four days a week, from Wednesday to Saturday.
